Fall is my absolute favorite season!! And what better way to introduce fall to you, than to share one of my personal fall favorite recipes… Pumpkin Bars!! I have been making these bars for a few years now and not only have they become an annual tradition for our Thanksgiving table, but they are incredibly EASY to make and share with those you love! These make great snacks for your kids, school functions and holiday parties.
I wish I could take the credit for this recipe, but it comes from one of my all-time favorites, Ms. Paula Deen!! Miss Paula and I share the love of butter and when you taste this cream cheese frosting, you’ll be sure to feel the love too! I’ve actually used this frosting recipe for so many other cakes and other things I’ve baked! I hope you’ll see how easy it is make these beauties and will get inspired to share the love of butter and fall today!
Ingredients
Bars: 4 eggs 1 2/3 cups granulated sugar 1 cup vegetable oil 15-ounce can pumpkin 2 cups sifted all-purpose flour 2 teaspoons baking powder 2 teaspoons ground cinnamon 1 teaspoon salt 1 teaspoon baking soda
Icing: 8-ounce package cream cheese, softened 1/2 cup butter or margarine, softened 2 cups sifted confectioners’ sugar 1 teaspoon vanilla extract (FYI – I used a delicious vanilla bean paste I found at Homegoods for about $6. This same paste averages $10+ at a cake supply store)
Directions:
Preheat the oven to 350 degrees.
Using an electric mixer at medium speed, combine the eggs, sugar, oil and pumpkin until light and fluffy.
Stir together the flour, baking powder, cinnamon, salt and baking soda.
Add the dry ingredients to the pumpkin mixture and mix at low speed until thoroughly combined and the batter is smooth.
Spread the batter into a greased 13×10 inch baking pan.
Bake for 30 minutes.
Let cool completely before frosting.
Cut into bars.To make the icing:Combine the cream cheese and butter in a medium bowl with an electric mixer until smooth. Add the sugar and mix at low speed until combined. Stir in the vanilla and mix again.
Spread on cooled pumpkin bars. Feel free to decorate with your favorite fall candies…Mine? What else..candy corn and candy corn pumpkins!
