[DNI] GRILLED SAUSAGE & VEGGIES

So I’ve decided to start writing weekly about an easy and delicious meal that looks like a masterpiece and is perfect for your date night IN!! The recipe below has become a staple in my recipe box. It’s super easy to make and it’s great for leftovers too. There’s nothing fancy to call this dish…it’s literally seasoned and grilled sausage over rice, and the rice can be whatever you have on hand.

Here’s what you need and what I used:

  • Tongs

  • Sharp kitchen knife to cut the veggies and sausage

  • 1 sweet onion

  • 1 green bell pepper

  • 1 smoked sausage link (I used Hillshire’s Beef Smoke Sausage – I buy in bulk so this picture contains 3, but you only need 1)

  • Butter

  • Lemon Pepper

  • Onion Powder

  • Garlic Power

  • Rice (You can use whatever you like, but I love this Trader Joe’s Rice Medley. It contains 3 frozen pouches. All you do is zap it in the microwave for 3 ½ minutes! It’s a combo of brown rice, red rice and black barley. I think it’s less than $4 and each pouches gives you 2 servings #winning)

All you have to do for the prep, is chop your veggies and your sausage link. This is something you can do if you have time at night or in the morning before your day gets started. I would then separate the veggies into one bag and the sausage into another. I like to cut the onion into quarters and then cut the bell pepper into long strips and then cut again in an angle, but any which way you want to cut them, is totally up to you.

Once you’re ready to cook, add about 1-2 tbsp. of butter on medium heat and throw your veggies into the pan. I then add my “trio” (I use these 3 A LOT for MANY of my meals), lemon pepper, garlic powder and onion powder and coat evenly. The smell these flavors mixed together gives off, is DIVINE!!! Let these veggies brown for a few minutes, while you care cutting the sausage. Again, you can cut it any which way. I cut into an angle and then cut it again.

While keeping the heat on medium, and after seeing that your veggies are browning, throw in the sausage. Feel free to add a little more of the “trio” seasonings into the pan. The sausage will begin to release its own flavors as well, while it cooking.

With a few minutes left to go, cook your rice. Since I’m usually in a rush and with the fact that this side dish is just rice, my go-to is this TJ’s medley…3 ½ minutes in the microwave and BAM! Be sure to read which side of the bag needs to sit up. Once it’s done, you are ready to plate all of your food!!!

Serve the rice and then top it off with your seasoned veggies and sausage! This plate is sure to leave smiles and make tummy’s happy!! Another option if you want a carb-less meal…skip the rice and make kabobs! Just make sure to quarter both onion and pepper for the poking! Remember to soak the sticks before you grill to you avoid a meltdown (literally!).

Hope you enjoy this dish! Let me know what you think!

xo,

Sylvia
