There are three quick bread recipes that are easy and no fuss while all serving a purpose in our household. It's either to disconnect and enjoy, to use up scraps in the kitchen, or gift a loved one "just because". Bread is essential, the act of " breaking bread" at the table is one of the purest forms of love. So I've gathered our three bread baking recipes that are quick and most favored among you all in one spot! From savory to the sweetest, enjoy!
PEASANT BREAD recipe is by @alexandracooks
Ingredients:
4 cups of AP Flour
2tsp of yeast, salt & sugar
2 cups of warm water
*Optional edible flowers, I cut some from my garden. Violas only have so much longer before the Miami heat takes over.
Mix dry ingredients, then add water and mix as well. Let rest in a warm spot (I did the microwave) for 1-2 hours enough to double in size. This only took an hour on my side. Then transfer to a bake safe Pyrex bowl or baking pan of choice. Bake on 425 F* for 15 minutes, then lower to 375 F* for another 15-20 minutes. Let cool for an hour (or at least try to wait).
For Butter:
300ML of room temp heavy whipping cream
A churner (only take a 5 min), hand/table top mixer (only take a 5 min) OR if you want the kids to help put in a large mason jar and have them shake it for the next hour 😂
Salt to taste
Have a bowl of ice cold water, this will help you firm the butter more and continue to press out the butter with wood spoons, paddles or cheese cloth.
Mix in some sea salt. This I’m still trying to get the hang of, I feel a Cold Stone employee would have a hand at this part. So if you feel you don’t mix in enough, just sprinkle some salt on top. GET YOUR OWN BUTTER CHURNER HERE (it will be a hit with the kids!)
EASY BAKE SCONES by Blonde2brunette
Ingredients:
3 cups of all-purpose flour
1/2 cup of sugar
5 teaspoons of baking powder
1/2 teaspoon of salt
3/4 cup of butter
1 egg beaten
1 cup of milk (I used heavy cream instead)
a drip of Vanilla Bean paste or extract
optional: cinnamon & nutmeg for spiced notes, or add lemon zest and just a pinch of lavender (either whole or powdered) for a floral and bright version.
Instructions:
Preheat oven to 400 degrees F (200C).
In a large bowl combine all dry ingredients and mix well.
Cube butter or get it to room temperature and pour it in.
In a separate container beat the egg and then add milk (optional tsp. vanilla extract)
Slowly begin to pour wet ingredients and mix with spoon or dough hook.
Dough will soon begin to form.
The dough isn't very sticky and doesn't need much grease or flower when rolling out, so just a lite dusting. Roll out to 1/2 inch thick and use a round cookie cutter or create a similar thickness by hand for a more rustic look. The choice is yours!
Grease your pan or place a silicone cooking sheet on your pan.
Place in the oven for 15 minutes or until a nice golden color appears. (every oven is different so start looking around 10 minutes).You can see the comparison below. I could have gone even more golden but I really want that soft cake like center.
After Baking Add:
Clotted Cream (you can make from scratch or visit Whole Foods, Milams, or Fresh Market cheese section (even though it's a form of cream) and find it in the tiniest of jars. I'll eventually blog how to make it from scratch but it is tedious process. If you cant find clotted cream- BUTTER IS JUST AS TASTY!!!
Raspberry Jam (or jam of your choice, raspberry is the most traditional).
Vanilla Spiced Banana Bread by Blonde2brunette
INGREDIENTS
3 Ripe (Browning) Bananas
2 Eggs
1 Cups Sugar (I do 3/4 cup, if I add I chocolate chips)
1 Stick (8 tablespoons) softened butter
1 & 1/4 Cup of All-Purpose Flour
1 1/2 Tsp of Vanilla Bean Paste (Vanilla extract will work as well)
1 Tsp Baking Soda
1/2 Tsp Salt
Spice it up with a bit of cinnamon, nut meg, clove
Optional: 1/3 Cup Chopped Walnuts , pecans are lovely too.
Optional: 1/3 Cup Chocolate Chips
Optional: Sprinkle Sugar on top before putting in the oven to create a wonderful sweet crust!
Instructions:
Preheat oven to 350 degree's F.
In a large bowl, beat bananas and butter with a fork (or any mashing tool), this recipe does not require much tools.
Add the eggs, sugar, vanilla bean paste, baking soda, salt and slowly begin to whisk.
Now slowly begin to whisk in you flour, and lastly your nuts and chips.
Pour the batter in a non stick (or well greased, or parchment covered) pan.
Place in oven and let bake for 40-50 minutes.
OPTIONAL SUGAR CRUST: After you grease or spray your pan sprinkle sugar before pouring in the batter and after. This will give a delicious crunch to your loaf. It never disappoints!
